ASSEMBLAGE: The assemblage is done with one vintage, blending 80% Chardonnay and 20% White Pinot from the oldest vineyard of the House. The wine is aged in oaken barrels.
VINEYARD: located in Celles sur Ource, a small village on ‘Côte des Bar’, in the Southern part of Champagne region.
VINEYARD'S SUBSOIL: marl and limestone on kimmeridgian terroir.
Reasoned Culture principles, hand picking harvest.
VINIFICATION: blending of grapes from different plots in controlled temperature vats.
TASTING NOTE: A pale gold colour with a fruity nose combining white pear, cooked apple, vanilla with hawthorn hints. A generous palate with mineral notes.
FOOD PAIRING: perfect with old ripened cheeses like Comte or Cantal…pairs also perfectly with lobster.
