This champagne is dressed in a pretty white gold color. Numerous chains of fine bubbles twirl around and weave a persistent crown. The nose is pleasant and flattering with notes of warm bread, mirabelle plums, Burlat cherries, white peach and hawthorn ; some hints of sweet spices and licorice will appear when aired and add complexity. On the palate, it’s fruity, fleshy at first and then the cherry and vine peach appear combined to white currant and raspberry. The bubbles are fine and caressing. Somes notes of blood orange bring a nice length and accompany the pleasant vinosity of this Champagne. To be enjoyed as an aperitif, it will pair beautifully with a pigeon with two firings, a vitello tonato or a rind-washed cheese like a farm soumaintrain.
